Erin Boyd Kappelhof is CEO of Eat Well Global, a boutique agency and Certified B Corporation that helps grow demand for healthy, sustainable food through insight-aligned strategy, compelling portfolios, and credible communication. Erin leads the firm in partnering with leading food and agriculture organizations to navigate complex nutrition, sustainability and communication challenges to help better food win.
Erin’s career spans food manufacturing, retail, agency, academia, and public health, giving her a systems-level perspective on how to translate science into strategy and action. Prior to joining Eat Well Global in 2013, she held roles at Unilever, Ahold, Weber Shandwick, and the Harvard School of Public Health. Across these experiences, she developed a deep belief that the private sector can—and must—play a constructive role in shaping healthier, more sustainable diets.
A registered dietitian and nutritionist, Erin brings both professional credibility and personal passion to her work. She is a co-chair of the Sustainable Nutrition Working Group of the Tufts Food and Nutrition Innovation Council, an alumna of the European Nutrition Leadership Platform and a member of the Academy of Nutrition and Dietetics. She holds an MS degree in Nutrition Communication from the Friedman School of Nutrition Science & Policy at Tufts University and an MPH degree from Tufts University School of Medicine. Based in Amsterdam with her husband and three sons, Erin is committed to building a purpose-driven business that not only advances sustainable healthy food systems, but also creates a thriving, values-led culture for Eat Well Global’s team.
