During a trip to India to visit family when she was 12 years old, Kavita Shukla’s grandmother gave her a homemade tea of different spices to ward off illness after having ingested a glass of unfiltered tap water. The spicy concoction prevented Shukla from becoming sick and ultimately became the inspiration behind years of experimentation with rotting fruits and vegetables that would lead to the creation of Shukla’s revolutionary FreshPaper.

Sustainia100 is an annual guide to Sustainia’s picks for 100 projects, initiatives and technologies at the forefront of sustainable innovation from around the world that gives investors, business leaders, policy makers and consumers insights into promising solutions within their respective fields. This year, Sustainia’s research team and advisory board screened a pool of 900+ nominated solutions from which the final 100 solutions were selected.

How many times have you cleaned out your refrigerator and been dismayed at how much food has spoiled? Every year, billions of dollars are wasted because of food spoilage. In fact, the EPA notes that “in 2011 alone, more than 36 million tons of food waste was generated, with only four percent of food waste generated diverted from landfills and incinerators for composting.” Meanwhile, the United Nations Food and Agricultural Organization (FAO) paints a wider picture by noting that one-third of food produced for human consumption is wasted, which translates into 1.3 billion metric tons of food per year.
